Ingredients
1 tbsp olive oil
1 onion, chopped
2 garlic cloves, chopped
¼ red pepper, diced
200g/7oz couscous, cooked as per packet instructions
1 tomato, chopped
30g/1oz fresh mint, chopped
30g/1oz fresh coriander, chopped
30g/1oz fresh flat leaf parsley, chopped
1 lemon, juice only

Method
1. Preheat a small frying pan.
2. Heat the oil in frying pan.
3. Add the onion and garlic and sauté for 2 minutes.
4. Add the pepper and sauté for 1 minute.
5. Remove the pan from heat.
6. Place the couscous in a salad bowl.
7. Add the contents of the frying pan to the couscous.
8. Add the tomatoes and herbs.
9. Add the lemon juice, mix well and serve.
